Our Story
Subversive Malting + Brewing sits on Main Street in the heart of Catskill, where the Hudson River meets the foothills of the Green Mountains. We started with a simple conviction: the best malts begin with the soil they're grown in.
We partner with regional farmers to cultivate heritage and modern barley varieties suited to the Hudson Valley climate. Every bushel is cleaned, steeped, germinated, and kilned on-site — a process that transforms raw grain into the foundational ingredient of exceptional beer, whiskey, and food products.
Our brewing program is equally intentional. What we don't sell as malt, we ferment. The result is a rotating lineup of ales, lagers, and experimental batches that taste unmistakably of this place.

Base Malt

Specialty Malt
Kilned low and slow for a deep caramel sweetness and a toastiness that adds body without heaviness. Perfect for amber ales.
Roasted Malt
Our house stout malt — intensely roasted with a coffee-dark finish and a velvety mouthfeel. A little goes a long way.
Wheat Malt
Unmodified wheat malt with a silky texture and a bright, citrusy character. Ideal for hefeweizens and wheat ales.
The Brewing Program
The brewing side of Subversive is where experimentation lives. Our rotating taps feature seasonal ales, barrel-aged stouts, and limited-release collaborations with fellow Hudson Valley producers.
Everything is brewed in our 15-barrel system using water from our on-property well and malt from our own kiln. The flavor — you'll taste the valley in every sip.
